green chilli- 1 pc
garlic- 2 cloves
coriander powder- 1 tsp
cumin seeds- 1 tsp
black pepper powder- 0.5 tsp
red chilli powder- 0.5 tsp
ladyfinger (okra)- 500 gms
mustard oil- 1 tbsp
onion- 1 pc
rock salt (pink himalayan)- 1 tsp
turmeric powder- 0.5 tsp
coriander leaves- 1 sprigs
tomato- 2 pc
steps to do
heat oil in a cast iron pan and saute the sliced okra for a few minutes.
add thinly sliced onions, green chilies, and salt.
saute everything together until the okra is lightly browned and the onions become translucent.
remove this mixture from the pan and set it aside. Next, heat more oil in the pan and add cumin seeds.
once they splutter, toss in chopped garlic and cook until golden brown. add quartered onions and cook them until they turn translucent and light pink.
now, add all the spices - turmeric powder, black pepper powder, coriander powder, and red chili powder - and stir for a minute.
finally, add roughly chopped tomatoes and cook them until softened. Season with salt, cover the pan, and let the tomatoes cook for a couple of minutes.
open the lid, mash the tomatoes slightly, and return the fried okra mixture to the pan.
saute for another minute, garnish with chopped coriander leaves, and your delicious dish is ready!
