bottle gourd curry

bottle gourd (lauki) - ½ pc
onion - ½ pc
tomato - ½ pc
ginger - ½ inch
garlic - 2 clove
green chilli - 1 pc
turmeric powder - ¼ tsp
red chilli powder - ¼ tsp
coriander powder - ¼ tsp
rock salt (pink himalayan) - to taste
water - ¼ cup
grated coconut - 1 tbsp
fennel seeds (sauf) - ¼ tsp
wood pressed groundnut oil - 1 tbsp
steps to do
heat some wood pressed groundnut oil in a pan over medium heat. add fennel seeds and let them splutter.
add the chopped onions and sauté until they turn golden brown. add grated ginger and minced garlic, and sauté for a minute until the raw aroma dissipates.
add the chopped tomatoes and green chilies. cook until the tomatoes soften and the mixture forms a thick gravy.
add turmeric powder, red chili powder, and coriander powder. stir and cook for a couple of minutes.
add the cubed bottle gourd with rock salt and water to the pan. cover and simmer until tender.
while the bottle gourd is cooking, grind the grated coconut, and roasted brown chana into a coarse paste.
once the bottle gourd is cooked, add the ground paste to the curry and mix well.
