capsicum curry

capsicum - 1 pc
onion - ½ pc
wood pressed groundnut oil - 1 tbsp
dried red chilli - 1 pc
curry leaves - 1 sprig
tomato - ½ pc
rock salt (pink Himalayan) - to taste
cumin seeds - ¼ tsp
ginger - ½ inch
garlic - 2 cloves
turmeric powder - ½ tsp
red chilli powder - ½ tsp
coriander leaves - 1 sprig
water - ¼ cup
steps to do
wash the capsicum and tomato. cut the capsicum into medium-sized cubes and chop onion finely. in a blender, make tomato puree and keep it aside.
heat groundnut oil in a pan over medium heat. add dried red chili, cumin seeds and allow them to crackle.
add the finely chopped onion and sauté until they turn golden brown. add grated ginger and garlic and aauté until the raw aroma disappears. add turmeric powder and red chili powder and cook for another minute
add the tomato puree and cubed capsicum to the pan and mix well with the spices in medium flame.
sprinkle rock salt (pink Himalayan) to taste and add water to achieve the desired consistency
reduce the heat and let the curry simmer for a few minutes until the capsicum is tender.
garnish with coriander leaves over the curry before serving.
