carrot beetroot soup

beetroot - 1 pc
carrot - 1 pc
garlic - 2 clove
coriander stalks - 8 stalk
water - ½ cup
cold pressed groundnut oil - 1 tbsp
bay leaf (tej patta) - 1 pc
black pepper powder - 1 tsp
rock salt (pink Himalayan) - to taste
lemon - ½ pc
coriander leaves - 2 sprig
steps to do
blend the carrots, beetroot, garlic, coriander stalk into a puree and strain.
add water to achieve the desired consistency.
in a pot, heat oil and add bay leaf, carrot beetroot puree, and the spices. let it simmer over low heat for 5 - 6 minutes.
add coconut milk, coriander leaves, and lemon juice. mix well and serve
