carrot beetroot soup

2 cups

ingredients

  • beetroot - 1 pc

  • carrot - 1 pc

  • garlic - 2 clove

  • coriander stalks - 8 stalk

  • water - ½ cup

  • cold pressed groundnut oil - 1 tbsp

  • bay leaf (tej patta) - 1 pc

  • black pepper powder - 1 tsp

  • rock salt (pink Himalayan) - to taste

  • lemon - ½ pc

  • coriander leaves - 2 sprig

steps to do

  1. blend the carrots, beetroot, garlic, coriander stalk into a puree and strain.

  2. add water to achieve the desired consistency.

  3. in a pot, heat oil and add bay leaf, carrot beetroot puree, and the spices. let it simmer over low heat for 5 - 6 minutes.

  4. add coconut milk, coriander leaves, and lemon juice. mix well and serve
