clear vegetable soup
2 cups

carrot - ½ pc
green beans - 4 pc
cabbage - ¼ cup
oauliflower - ¼ pc
onion - ½ pc
lemon - ½ pc
coriander leaves - 2 sprig
rock salt (pink Himalayan) - to taste
black pepper powder - ½ tsp
wood pressed groundnut oil - 1 tbsp
water - 2 cups
steps to do
wash and chop all the vegetables into small pieces.
heat a small amount of groundnut oil in a large pot.
add finely chopped onions and sauté until they turn translucent.
add the chopped vegetables and saute for another 1-2 minutes.
add water to the pot and let it come to a gentle boil.
once the water boils, reduce the heat and let the soup simmer until the vegetables are tender but still slightly crisp.
season the soup with rock salt and black pepper powder to taste. adjust the seasoning as per your preference.
add the chopped cabbage to the simmering soup in the final few minutes of cooking.
squeeze the lemon juice and garnish with coriander leaves
