paneer poha

red rice poha- 1 cup
paneer- 100 gm
wood pressed groundnut oil- 1 tbsp
cumin seeds- 0.5 tsp
curry leaves- 2 sprigs
ginger- 0.5 inch
onion- 0.5 pc
tomato- 0.5 pc
rock salt (pink himalayan)- 1 tsp
red chilli powder- 0.5 tsp
cumin powder (jeera powder)- 0.5 tsp
turmeric powder- 0.5 tsp
coriander powder- 0.5 tsp
water- 1 cup
steps to do
1. rinse the red rice roha in water, drain excess water, and set it aside to soften.
2. heat groundnut oil in a pan, add cumin seeds, and let them splutter.
3. add curry leaves, finely chopped ginger, and sauté for aroma.
4. add finely chopped onions and sauté until translucent.
5. stir in diced tomatoes and cook until they soften.
6. add rock salt, red chili powder, cumin powder, turmeric powder, and coriander powder. Mix well.
7. crumble paneer into the mixture and mix gently to combine all flavors.
8. add a little water to moisten the mixture and let it simmer for a few minutes to allow flavors to meld.
9. add the softened red rice poha to the paneer bhurji mixture.
10. mix well to coat the poha with the flavorful paneer and spice mixture.
11. taste and adjust the seasoning as needed, adding more salt or spices if required.
12. garnish with fresh coriander leaves for added freshness and flavor
