white quinoa- 0.5 cup
onion- 0.5 pc
carrot- 0.5 pc
green beans- 4 pc
tomato- 0.5 pc
spinach-0.5 bunches
green peas- 0.25 cup
ginger- 0.5 inch
garlic- 2 cloves
lemon- 0.5 pc
cumin powder (jeera powder)- 0.25 tsp
coriander powder- 0.25 tsp
turmeric powder- 0.25 tsp
rock salt (pink himalayan)- 1 tsp
black pepper powder- 0.25 tsp
extra virgin olive oil- 1 tbsp
water- 1 cup
coriander leaves- 2 sprigs
red chilli powder- 0.25 tsp
cashew- 5 pc
steps to do
1. wash quinoa, soak for 30 minutes, then drain.
2. heat oil in a pan, add onion, salt, and fry until starting to brown.
3. add garlic, ginger, carrots, green beans, spices, and fry for 2-3 minutes.
4. add soaked quinoa, tomatoes, peas, salt, and water. bring to a boil, then simmer covered for 20-25 minutes until quinoa is cooked.
5. turn off the stove and immediately add spinach, lemon juice, black pepper, and mix gently. top with toasted cashews and cilantro.
