idli dosa batter - 1 cup
onion - ½ pc
carrot - ½ pc
capsicum - ½ pc
tomato - ½ pc
idli podi - 1 tbsp
green chilli - 1pc
curry leaves - 1 sprig
coriander leaves - 1 sprig
cold pressed groundnut oil - 1 tbsp
rock salt (pink Himalayan) - to taste
steps to do
mix chopped vegetables, herbs, chilli, salt in a bowl.
on a hot non-stick pan, add a ladleful of uttapam batter and add a layer of the mixed veggies. sprinkle podi over the veggies and drizzle some oil or ghee around the edges.
let it cook for 1-2 minutes and flip the uttapam and cook in low flame for 2 minutes or until the veggies get golden brown and crisp. serve hot and enjoy.
